2c.chopped romaine lettuce
2tbsp.shredded Parmesan Reggiano cheese
1½lbs.medium shrimpcooked and peeled
¾c.grape or cherry tomatoeshalved
¾c.whole wheat seasoned croutons
Dressing
3tbsp.Greek yogurt
2tbsp.fresh lemon juice
1tsp.grated Parmesan Reggiano cheese
¼tsp.black pepper
½tbsp.minced garlic
½tsp.apple cider vinegar
Instructions
Combine all of the dressing ingredients in a bowl and stir with a whisk. Chill until ready to use for salad.
For salad, combine all ingredients in a large bowl. Toss lightly to mix. Cover salad with dressing and toss well to coat. Serve immediately.
