Baked Coffee Cake Doughnuts

You love coffee cake, but do you love coffee cake DOUGHNUTS? The answer is yes. I know. You haven't tried them yet. The answer is still yes. These delicious doughnuts pair perfectly with your coffee for breakfast in the morning. They are a cinch to whip together and will be gone before you know it (better make a double batch to begin with!)

Ingredients

  • 2 c. all purpose flour
  • 3/4 c. white sugar
  • 2 tsp. baking powder
  • 1 tsp. ground cinnamon
  • 1 tsp. sea salt
  • 3/4 c. buttermilk
  • 2 eggs
  • 2 tbsp. canola oil

Crumb streusel topping

  • 2/3 c. granulated sugar
  • 2/3 c. all-purpose flour
  • 1 3/4 tsp. ground cinnamon
  • 4 tbsp. salted-butter melted
  • 1/3 c. chopped toasted pecans

Instructions

  1. Preheat oven to 425 degrees and grease a donut pan with oil spray.   

  2. Add flour, sugar, baking powder, cinnamon and sea salt to a large bowl and whisk together until combined. 

  3. In a separate bowl combine the buttermilk, eggs, and oil, whisking together with a fork.

  4. Dump the wet ingredients into the dry ingredients. Using a rubber spatula, fold until a batter begins to form and the flour begins to disappear. Be careful not to over-mix as this will make the doughnuts tough and dry. Stop mixing as soon as the last streak of flour disappears and spoon the batter into the piping bag fitted with a large round tip.

  5. Pipe a small amount of batter into each of the 12 greased donut cups in a circular motion and be careful not to over-fill. This batter rises up quite a lot so filling the cups only half-way works perfectly. Sprinkle generously with streusel topping.

  6. Bake for about 7-9 minutes.

Topping

  1. Prepare the topping by mixing together sugar, flour and cinnamon. Once it is combine stir in melted butter, stirring till well combined and then add pecans.
