Tortellini & Artichoke Soup

Ingredients

  • 6 c. organic chicken stock
  • 1 9 oz. pkg. refrigerated cheese tortellini
  • ½ c. oil-packed sun dried tomatoes julienned
  • 1 15 oz can garbanzo beans, rinsed and rained
  • 2 c. artichoke hearts
  • ½ c. Greek yogurt
  • Parmesan cheese for garnish

Instructions

  1. In a dutch oven or large stock pot, bring the chicken stock to a boil. 

  2. Add the tortellini and sun dried tomatoes to the stock and cook until the tortellini float to the top, about 3-4 minutes.

  3. Reduce heat and add the garbanzo beans, artichoke hearts, and Greek yogurt.  Cook for 2-3 minutes or until heated through. 

  4.  Serve immediately topped with grated Parmesan cheese if desired.
