Ingredients

  • 1 lb. lean ground turkey
  • 1 large onion finely diced
  • 2 tbsp. fresh minced garlic
  • 2 c. celery chopped
  • 2 c. carrots peeled and chopped
  • 2 c. green beans I used Costco organic in the freezer section
  • 1 large head cauliflower chopped
  • 1 28 oz can diced tomatoes, undrained
  • 1 12 oz can vegetable juice, (can use low sodium original V8)
  • 1 32 oz carton low sodium vegetable broth
  • 2 c. water
  • 1 tbsp. parsley
  • 1 tsp. salt
  • 1/2 tsp. pepper
  • 1 bay leaf
  • 1 c. cooked quinoa

Instructions

  1. In a large stock pot, brown the ground turkey together with the onion, garlic and celery. 

  2. Add remaining ingredients, except quinoa. Bring to a boil, cover and simmer 1 hour. 

  3. Add quinoa to the soup and cook an additional 5 minutes until heated throughout. Remove bay leaf before serving.
