Power Granola

Ingredients

  • 2 c. rolled oats
  • 1/3 c. ground flaxseed
  • 1/4 c. chopped walnuts
  • 1/4 c. chopped slivered almonds
  • 2 tsp. ground cinnamon
  • 1/3 c. orange juice
  • 1/3 c. honey
  • 1/4 c. coconut sugar
  • 2 tsp. coconut oil
  • 1 tsp. vanilla extract
  • 1/2 tsp. salt

Instructions

  1. Preheat oven to 300°.  

  2. Combine dry ingredients (minus the coconut sugar) in a medium bowl; set aside.

  3. In a small saucepan combine orange juice, honey, coconut oil, coconut sugar and vanilla. Cook over medium heat just until sugar dissolves and coconut oil melts stirring frequently. Remove from heat. 

  4.  Pour honey mixture over oat mixture, stirring to coat. Spread granola mix in a thin layer onto a jelly-roll pan coated with cooking spray or lined with a silicone baking mat. 

  5. Bake at 300° for 10 minutes; stir well. Bake an additional 10 to 15 minutes or until golden brown.

  6. Spoon granola into a bowl. Cool completely.

Recipe Notes

You are able to store completely cooled granola in an airtight container at room temperature for up to 2 weeks.
