Skinny Greek Dip

Ingredients

  • 8 oz. plain hummus (I used edamame hummus)
  • 1 c. 0% fat Greek yogurt
  • 2 cloves garlic minced
  • 1 tsp. chopped fresh dill
  • Juice of 1/2 lemon
  • Pinch kosher salt
  • Freshly ground black pepper
  • 2 c. romaine lettuce shredded
  • 1 c. marinated artichoke hearts chopped
  • 1/2 c. black beans rinsed & drained
  • 1 c. Roma tomato seeded, ½-inch dice
  • 1/4 c. crumbled feta cheese
  • 1/4 c. Kalamata olives sliced

Instructions

  1. In a small bowl, mix together yogurt, garlic, dill, lemon juice, salt and freshly ground pepper. Set aside.

  2.  In an 8”x8” or pie pan glass dish, layer the hummus, yogurt mixture, lettuce, artichoke, black beans, tomatoes, feta and olives. 

  3. Serve with Food Should Taste Good Multigrain Tortilla Chips.
