Gluten Free Cookie Dough Bites

If you are a cookie dough fan, but not a fan of all the calories - sugar - and added lbs that cookie dough brings, you must try these! These Gluten Free Cookie Dough Bites are absolutely delicious. Made without ANY white flour or white sugar. Who said you have to give up all things delicious when you want to be health conscious?

Ingredients

  • 2 tbsp. coconut oil
  • 2 tbsp. milk of choice almond or coconut
  • 1/4 c. coconut palm sugar
  • 1/8 c. pure maple syrup
  • 1/2 tbsp. pure vanilla extract
  • 1/4 tsp. salt
  • 1 c. oat flour certified GF
  • 1 c. almond flour
  • 1/3 c. carob chips or mini chocolate chips

Instructions

  1. In a large bowl, melt the coconut oil.   

  2. Whisk in the milk, coconut sugar, maple syrup and vanilla until well combined. Add the flours and salt. Taste and adjust sweet if needed, or add more flour or oil for the soft sticky, but not too sticky dough. Be careful not add too much flour, they dry out as they chill.

  3. Fold in the carob or chocolate chips and mix. Using a small cookie scoop, scoop onto a parchment sheet.

  4. Refrigerate until set.
