Shrimp Ceviche

This refreshing Shrimp Ceviche dip has outstanding flavor! Crisp, fresh, and perfect for any party, gathering, get together, potluck, or even for no reason at all!

Ingredients

  • 1 lb. medium shrimp raw
  • 7 limes juiced
  • 1 jalapeno deseeded & diced
  • 4 Roma tomatoes chopped & juice removed
  • 2 cucumbers peeled, deseeded, & diced
  • 1 avocado diced
  • 1 bunch cilantro stems removed & chopped
  • 1/2 sweet yellow onion diced
  • Salt to taste

Instructions

  1. In a large bowl add the lime juice, jalapeno and onions.   

  2. Cook shrimp in 2 tbsp. water. Cut each shrimp into thirds.

  3. Add all remaining ingredients including shrimp to lime juice, jalapeno and onions. Salt to taste.

  4. Refrigerate one hour, up to overnight for best flavor. Serve with tortilla chips, over a tostada, or with any of your favorite Mexican dishes.

Recipe Notes

For best flavor refrigerate overnight. But good luck lasting that long. One bite and you'll have a hard time tearing yourself away from the bowl!
