Ingredients

  • 2 c. whole wheat flour
  • 1 tbsp. baking powder
  • 1 tsp. salt
  • ¼ c. coconut oil softened, but not melted
  • ¾ c. almond or coconut milk

Instructions

  1. Preheat oven to 425º F.

  2. Add the flour, baking powder, and salt to a large bowl and stir with a whisk until well combined.

  3. Using a pastry cutter, cut the coconut oil into the flour mixture until it resembles fine crumbs.

  4. Pour in the almond or coconut milk and stir until a soft, sticky dough forms. If your dough seems too dry, you can add an extra tablespoon or two of milk as needed.

  5. Using your hands, knead the dough until just combined, being careful to not over-mix.

  6. Dump the dough onto a cutting board that has been lightly dusted with flour. Roll the dough to about a ½" thickness and cut circles using a 2" biscuit cutter.

  7. Transfer biscuits to a baking sheet. Bake for 10 minutes until biscuits are slightly golden.

  8. Remove from the oven and serve immediately with butter and honey or maple syrup, if desired. Makes about 8-10 biscuits, depending on the size of your biscuit cutter.
