Ingredients

  • 1 1/2 c. whole wheat flour
  • 2 tsp. baking powder
  • 1/2 tsp. salt
  • 1 tbsp. honey
  • 1 large egg
  • 1 1/2 c. lukewarm milk
  • 1/3 c. melted coconut oil

Instructions

  1. Preheat your waffle maker. 

  2. Whisk together the flour, baking powder, and salt. In a separate bowl, whisk together the egg, milk, honey, and coconut oil. Mix together the wet and dry ingredients, stirring just until combined. The batter will be a bit lumpy; that's OK.

  3.  Ladle batter in to waffle maker and cook the waffles until lightly golden brown.

I used whole wheat pastry four for an even lighter waffle that was absolutely perfect!
