Ingredients

  • 2/3 c. butter
  • 2 c. quick oats
  • 1 c. granulated sugar
  • 2/3 c. all-purpose flour
  • 1/4 c. brown rice syrup or corn syrup
  • 1/4 c. milk
  • 1 tsp. vanilla
  • 1/4 tsp. salt
  • 1 3/4 c. milk chocolate chips

Instructions

  1. Preheat oven to 375. Line baking sheet with parchment paper, Silpat liner, or foil.
  2. Melt butter in medium saucepan; remove from heat. Stir in oats, sugar, flour, brown rice syrup, milk, vanilla, and salt; mix well.
  3. Drop by level tsp, about 3 inches apart, onto prepared baking sheets. spread thinly with rubber spatula.
  4. Bake for 6-8 minutes or until golden brown. Cool completely on baking sheets on wire racks. Peel cookies from liner.
  5. Heat chocolate chips in microwave or double broiler until melted. Spread thin layer of melted chocolate onto flat side of half the cookie. Top with remaining cookies.

[My 2 Cents]
So, pay careful attention to the detail of: ONE LEVEL TEASPOON THREE INCHES APART. These babies spread like a wildfire. I thought for sure I had made them small enough and spaced them far enough until I looked in the oven and to my surprise I just about had one sheet of a cookie rather than 12 individual ones. Next time I make them I will definitely heed that note. Not that giant cookies aren't fun, I was just looking for more of a dainty cookie instead. They were gobbled up nonetheless.
