Ingredients

  • 2/3 c. butter softened
  • 1 3/4 c. packed brown sugar
  • 2 eggs
  • 1 tsp. pure vanilla extract
  • 2 c. all-purpose flour
  • 2 tsp. baking powder
  • 1/2 tsp. ground cinnamon
  • 1/4 tsp. salt
  • 1 1/4 c. chopped peeled tart apples
  • 1/3 c. English toffee bits or almond brickle chips
  • 1/3 c. chopped walnuts
  • Vanilla ice cream optional

Instructions

  1. In a large bowl, cream butter and brown sugar. Add eggs, one at a time, beating well after each addition. Beat in vanilla.
  2. Combine the dry ingredients in a separate bowl; slowly add to creamed mixture and mix well. Fold in the apples, toffee bits, and walnuts.
  3. Transfer to a greased 9x13-in. baking dish. Bake at 350 for 20-25 minutes or until a toothpick inserted near the center comes out clean. Cool on a wire rack. Cut in to squares.
  4. Serve with ice cream (if desired).

[My 2 Cents]
It's amazing what a difference using high quality vanilla can make. I mentioned in my Pecan Pie Cheesecake that I was recently introduced to Lagrima Pure Vanilla Extract and it is unbelievably amazing. Stay tuned for all of the details of the recent vanilla party I attended. For this recipe the second time I made it, I used Lagrima and I can honestly say I could tell a difference. It was ever-so-slightly taken to the next level of amazingness!
