Almond Joy Granola

If you're a fan of the almond, coconut, and chocolate combo, then this Almond Joy Granola would be perfect! Make this to enjoy in your breakfast parfait, afternoon snacks, or after dinner treat!

Ingredients

  • 2.5 c. rolled oats
  • 1 c. unsweetened coconut flake
  • 1 c. raw almonds roughly chopped
  • 3 tbsp. organic cane sugar
  • ¼ tsp. of salt
  • 1/4 c. coconut oil
  • 1/4 c. almond butter
  • 1/3 c. maple syrup
  • 1/3 c. Lily’s Dark Chocolate Premium Baking Chips
  • 1/3 c. yogurt chips

Instructions

  1. Preheat oven to 340 F. 

  2. In a large bowl, mix the oats, coconut flakes, sugar, salt, and almonds together.

  3. In a small skillet over medium-low heat, warm the coconut oil, almond butter, and maple syrup, and pour over the dry ingredients. Mix well.

  4. Spread the mixture evenly onto one large or two small baking sheets (be careful not to crowd the granola) and bake for 20-25 minutes. After 10 minutes, stir to ensure even baking. Watch carefully the last five or so minutes as the granola can burn quickly. 

  5. Once the granola is visibly browned, remove from the oven and let cool completely. Once cooled, add Lily’s Dark Chocolate Premium Baking Chips and toss.

  6. Store in an air-tight container. Yields approx. 20 quarter-cup servings.

Recipe Notes

If you wanted, you can add the chocolate chips to the granola right out of the oven while the granola is still warm so it melts and coats the granola if you'd prefer!
