Honey-Sweetened Apple & Sweet Potato Mash

I love mashed sweet potatoes around the holidays, and really love them loaded with brown sugar, butter, and marshmallows. This Honey-Sweetened Apple & Sweet Potato Mash is an excellent alternative that is a great way to curb your craving while still being healthy!

Ingredients

  • 3 lb. sweet potatoes peeled and cut into approx. 1" chunks
  • 3 med. apples peeled & cut into approx. 1" chunks
  • 1 tsp. ground cinnamon
  • 1 tsp vanilla
  • 1/3 c. Swanson Cream Starter™
  • 1/4 c. honey
  • 1/4 c. chopped pecans

Instructions

  1. In a large pot, boil peeled sweet potatoes. Cook until potatoes are fork-tender, about 10 minutes.

  2. Add apples, cinnamon and Swanson Cream Starter™. Return to stove top and heat 5 minutes until apples are warmed through; stirring to prevent potatoes from sticking. Remove from heat and add honey.

  3. Using a hand mixer or immersion blender, mash apples and potatoes until smooth. Add vanilla and additional Swanson Cream Starter™ until desired consistency is reached.
