Cheesy Holiday Potatoes

Ingredients

  • 5 large potatoes
  • 1 c. whipping cream
  • 1 c. New Traditional Swanson Cream Starter™
  • 1 med. onion thinly sliced
  • 2 cups grated cheddar cheese
  • 2 tsp. Parsley flakes
  • Salt and Pepper

Instructions

  1. Cut potatoes into thin french fry strips, and lay the fries, in a 9×13″ glass pan.

  2. Pour the cream and Swanson Traditional Cream Starter over the top of the fries. Spread an even layer of sliced onions. Salt and pepper generously.

  3. Sprinkle grated cheddar cheese over the top followed by the parsley flakes on top of the cheese.

  4. Cover with foil, and poke a fork through the top of the foil, 2 or 3 times to allow a little steam to escape.

  5. Place your oven rack in the middle of the oven. Cook at 400 degrees F for about 1 hour and 15 minutes, or until potatoes are tender.

  6. During the last 15 or 20 minutes of baking lower your rack one more step, making a brown and crispy crust on the bottom of your potatoes.
