Ingredients

  • 1 lb. ground beef
  • 1 pkg. taco seasoning
  • 1 8 oz. can kidney beans, rinsed and drained
  • 1 c. salsa
  • 4 med. green bell peppers or any other color
  • 1 med. tomato chopped
  • 1/2 c. cheddar cheese shredded
  • 1/2 c. sour cream

Instructions

  1. Preheat oven to 350 F.

  2. In a large skillet, brown the ground beef; drain.

  3. Stir in the taco seasoning, kidney beans, and salsa. Bring to a boil; reduce heat and simmer for 5 minutes. 

  4. Cut peppers in half lengthwise; remove and discard seeds and stems. Immerse peppers in boiling water for 3 minutes; drain. 

  5. Spoon about 1/2 c. meat mixture into each pepper half. Place in an ungreased 9x13 in baking pan and bake for 15-20 minutes or until the peppers are crisp and tender and filling is heated through.

  6. Top each with tomato, cheese, and a dollop of sour cream.
