These Whole Wheat Pumpkin Chocolate Chip Cookies are phenomenal! They are made with whole wheat flour and have just enough pumpkin to make them perfect for Halloween or Thanksgiving. Nothing screams fall like pumpkin chocolate chip cookies, and these happen to be a little bit healthier for you!

Ingredients

  • 1/2 c. 1 stick butter, softened
  • 1 c. brown sugar
  • 1/4 c. coconut sugar
  • 1 tsp. vanilla
  • 5 tbsp. pumpkin purée not pumpkin pie filling
  • 1/2 tsp. salt
  • 1/2 tsp. baking soda
  • 1/2 tsp. cinnamon
  • 1/4 tsp. ginger
  • 1/8 tsp. ground cloves
  • 1 1/2 c. whole wheat pastry flour
  • 1 c. semi-sweet chocolate chip

Instructions

  1. Preheat oven to 350 F.

  2. Combine the butter and sugars until mixed well. Add vanilla and pumpkin; mix until smooth.

  3. In a separate bowl, combine dry ingredients and add to wet ingredients just until combined. Stir in the chocolate chips.

  4. Scoop by rounded tablespoon onto an ungreased cookie sheet. Bake for 12-15 minutes being careful not to over bake. Cool slightly before removing from pan.
