These Cashew Chicken Salad Lettuce Wraps are a healthy twist on the traditional chicken salad. Ditch the bread, throw it in a lettuce wrap and you've got a tasty low-carb low-calorie meal!
In a bowl combine all of the ingredients except the lettuce.
Mix well to combine.
Divide evenly between six lettuce leaves.
Serve immediately or refrigerate until read to eat.
