There’s a new Smith’s in my area and I’ve had so much fun discovering all of the delicious things they have to offer. They have signs everywhere telling you exactly where the natural and organic foods are. You know (if you’ve been reading for a while) that we buy primarily organic and all-natural foods, so being able to hunt them down quickly is very important to us. I love how bright, cheery, and clean the store is plus the friendly the service is top notch – there must have been at least three people stop me on my way back to the dairy asking if I was finding everything alright! I love that, especially when I’m having a bit of trouble locating things on my grocery list. This trip however I knew exactly what I wanted and where it was. I’ve been in the winter funk and needed something to pull me out of it and sprinkle a little extra sunshine into my morning. Heaven KNOWS I need that going out the door… not so much of a morning person.

It’s a battle every single day for me and I’ve found that the only way I stay on track is to have a plan in place and prep as much as possible either on the weekend for the week ahead or nightly for the following day. When I was thinking of ways I could add a little extra sunshine into my day I remember my Tropical Fruit & Yogurt Parfait. I absolutely adore parfaits but have really been wanting to jump on the smoothie train (I know, I know I’m late to the party). While at Smiths I snagged some Silk Coconut Milk and SO Delicious Coconut Milk Yogurt Alternative to blend up this scrumptious smoothie bowl. Within this bowl you’ve got coconut, kiwi, pineapple and mango. Doesn’t that sound delicious! If this doesn’t transport you to a happy place, I don’t know what will!
Tropical Dream Smoothie Bowl
Ingredients
- 2 c. ice
- 1 5.3 oz. SO Delicious Vanilla Coconutmilk Yogurt Alternative
- 1/2 c. SILK Coconut Milk
- 1/2 c. pineapple tibdits divided
- 1 fresh mango divided
- 1 tbsp. honey optional
- 1 kiwi thinly sliced
- 2 tbsp. sweetened coconut
Instructions

Add ice, SO Delicious Vanilla Coconutmilk Yogurt Alternative, SILK Coconut Milk, 1/4 c. pineapple, 1/2 mango, and honey (optional) to your blender and blend until smooth.

Divide smoothie between two bowls. Top with remaining half of pineapple tidbits, mango thinly sliced, kiwi slices, and coconut. Serve immediately.
