T.V. News Appearances

I’ve landed a monthly spot on KUTV 2 News This Morning! I couldn’t be more excited. I always have a great time every time I go and love sharing great recipes each time. If you are a local, watch for me the third Monday of every month. Each morning I’m on, I’ll post the recipe that morning so you can make it right away :)

Here is my appearance from August 3rd, 2015. I’ve shared my Coconut Blueberry Chia Muffin recipe on Tried and Tasty, my Coconut Strawberry Chia Muffins on Super Healthy Kids and was excited to share my Coconut Peach Chia Muffins with the 2News This Morning viewers. I loved being in the kitchen with Holly, the first time we had a segment together!

After a year and a half,  June was my first month off since starting my segments. My scheduled Monday I happened to be flying home from Portland from my first out of state blogging conference. I missed my news friends and resumed my schedule on July 6th 2015 when I made my Frozen Strawberry Peach Lemonade. The perfect way to cool off your summer and beat the high temps! (video not available)

Here is my appearance from May 4th, 2015. This was my first time in the newly remodeled kitchen and I LOVED it! Absolutely gorgeous. In fact, if I had room in the car I would have taken the whole thing with me. I wanted to utilize the fancy new stove, so I made my Chicken & Kale Linguine. A delicious healthy dinner idea that isn’t guilty like your traditional pasta dishes! (video not available)

Here is my appearance from April 6th, 2015. After the success of my Chicken, Spinach & Cream Cheese Tortilal Wrap I wanted to bring another delicious wrap to the station. So I made my Southwestern Chipotle Chicken Wrap which if I do say so myself is out of this world delicious!  The station kitchen was under remodel so we relocated to the guest lobby – which was kind of fun to switch things up!

Here is my appearance from March 3rd, 2015. Breakfast is one of my most favorite meals (I mention that quite frequently). I made my 100% Whole Wheat Waffles on the same day as National Pancake Day without even realizing it! Who says you can’t have waffles on pancake day anyway. This whole wheat version is light, crispy, and the perfect way to start your morning off right!

Here’s my appearance from February 2, 2015. With February being the month of love, it’s easy to get caught up in the chocolates and sugar-loaded sweets. If you’ve stuck to your resolution past January and made it in to February, this sweet treat will be the perfect way to celebrate! I made my 5-Ingredient No Bake Strawberry Tart which is crazy easy and super delicious. It’s always a win/win if you can satisfy your sweet tooth without sacrificing half your days worth of calories.


Here’s the appearance from January 7th, 2015. At the beginning of the year everyone is a little more health conscious. I mean, you stick to your new year’s resolutions for at least a few weeks right? I made my Salmon & Avocado Stuffed Lettuce Wraps. The perfect quick and easy lunch idea for any salmon lover! Don’t like salmon? No problem, swap it for canned chicken and you’ve got a delicious and easy substitution!


Here is the appearance from December 15, 2014. A fantastic Christmas breakfast idea made easy with Rhodes frozen dough! Switch things up this year for your holiday breakfast or brunch and add these delicious Coconut Cranberry Citrus Twists to the menu! Rhodes takes the hard work out of it, all you’re left to do is add the yummy filling, twist, bake, & go!


Here is the appearance from November 17, 2014. Often times after Thanksgiving you’re left with too much turkey and not enough recipes to use it all. I decided to give you a great tasty way to use up some of those yummy leftovers in my Turkey & Potato Corn Chowder! It’s filling, it’s hearty, it’s got a great lineup of ingredients and most importantly: it’s delicious! You’ll want to keep this recipe on hand around the holidays and I guarantee you won’t have turkey leftover for long!



Here’s the appearance from October 20th, 2014. With the popularity of my Caramel Apple Oatmeal, I decided to switch things up and turn things up a notch. My Caramel Apple French Toast is too good to keep to myself, I want to share it with everyone I know (and even everyone I don’t know). Take a look, you’ll see just how delectable this breakfast or brunch is! Made without any refined sugars or corn syrups, the ‘caramel’ is the sweetest healthy caramel you’ll ever find. Like my style? I got my adorable dress from White Plum, one of my favorite online shops!

We all need ideas of quick & easy yet tasty breakfast ideas. My Apple Pie Parfait is the perfect treat to start your morning right!


Here’s the appearance on August 18, 2014. I recently tried and fell in love with Papa Murphy’s Thai Chicken Pizza and wanted to make a version of it at home! To switch things up just a bit, I opted to use my FAVORITE Whole Wheat Pizza Crust. Let me just tell you, before you even BAKE this pizza it smells DIVINE!! You are not going to want to miss this, and you are definitely going to want to add my Thin-Style Thai Chicken Pizza to your menu, it’s a keeper!

Here’s the appearance on July 21st, 2014. I’m a sucker for sweets and treats, but it doesn’t match up with my health and fitness goals. So when I can, I try to make things a little bit healthier when I can. For instance – subbing coconut cream for heavy whipping cream or whole wheat brownies for regular rich and fudgy brownies! This ‘Not-So-Guilty Almond Joy Trifle‘ is so delicious and aren’t AS bad as they could be. Perfect for BBQ’s, potlucks, or get-togethers of large groups!

Here is the appearance on June 16th, 2014. After starting in to my 4th round of the Game On Health Challenge I rededicated myself to calorie counting. With healthy eating on my mind I wanted to share a recipe that proved that eating the right kinds of foods can not only be fuel and energy for your body but also taste wonderful and be quick to count in your daily calorie goals. These Healthy Cashew Chicken Lettuce Wraps are divine. Hands down one of my favorite quick healthy lunches!

Here is the appearance on May 21st, 2014. With Memorial Day approaching I wanted to share a festive red white & blue recipe. My Red White and Blue Cherry Blueberry Shortcakes were the perfect way to celebrate. Not only are they absolutely gorgeous, they are relatively quick and simple to whip up! Most of all, they are so delicious!

Here’s the appearance on April 21st, 2014. The day after Easter, I figured I would whip up a great way to use up some of your Easter leftovers. I’m sure you probably had a lot of boiled eggs leftover (hopefully you tried my Oven Baked Hard Boiled Eggs) and if you enjoyed ham as well – this is the recipe for you! Cobb Salad Tacos. Doesn’t that sound so delicious? Well, I can tell you they are as delicious as they sound!

Here’s the appearance on March 10th 2014. In preparation for St. Patrick’s Day I’m showing you a fabulous green lunch idea! Not only is it perfectly delicious, it’s absolutely green in every way. My Chicken, Spinach & Cream Cheese Tortilla Wrap recipe is rapidly becoming a favorite.

Here’s the appearance on February 17th where I made one of my new favorite recipes. It can be made for breakfast, a snack just after lunch, or a treat after dinner. You do not want to miss my Lemon Glazed Blueberry Scones. They are simply wonderful!
