A few weeks ago, I was introduced to the most delicious pizza! If you haven’t had the Papa Murphy’s De-Lite Thai Chicken Pizza, you are missing out. I don’t know if it’s available everywhere, or if it will be around for long. I’m SO glad I was introduced to it, and even MORE happy that I’ve recreated it at home!! In trying to eliminate white flour, I opted to use a whole wheat flour for the crust. My all-time favorite homemade crust is my Whole Wheat Pizza Crust. It’s so tasty and SO healthy!
Now is the perfect time to make this too because with gardens everywhere at near max capacity, this is a great way to use up some green onions, red onions, and zucchini! Our zucchini this year unfortunately totally tanked. But I was able to snag the green and red onions. The best part about this pizza is the red chili sauce as the base. I’m telling you, it’s divine. But don’t take my word for it, make it!
Thin-Style Thai Chicken Pizza

Ingredients
- Whole Wheat Pizza Crust
Thai Sweet Chili Sauce
- 3 large garlic cloves peeled
- 2 red Jalapeño peppers deseeded
- ¼ c. white distilled vinegar
- ½ c. sugar
- ¾ c. water
- ½ tbsp. salt
- 1 tbsp. cornstarch
- 2 tbsp. water
Toppings
- 1 c. cooked chicken cubed & seasoned with cumin, salt, & pepper
- 1 medium zucchini thinly sliced
- 1/4 white onion thinly sliced
- 1/4 red onion thinly sliced
- 2 c. shredded mozzarella 1 c. reserved
- 2 tbsp. sliced green onions
- Red pepper flakes optional garnish
Instructions

Preheat oven to 425 F.

With prepared pizza dough, spread thinly and evenly on a round pizza pan or stone. Spread 1/2 c. Thai Sweet Chili Sauce evenly over crust. Top with 1 c. shredded mozzarella followed by zucchini slices, chicken, and onions (red and white).

Sprinkle remaining cheese evenly over pizza. Garnish with green onions & red pepper flakes.

Bake for approximately 15-18 minutes, until cheese is fully melted and crust is cooked.
