This is one of the recipes from the Simple Green Smoothies Cookbook. Have you checked it out yet? If not you MUST!!! It’s day 13 of the challenge and I’ve made it all but one day so far. Major bummer about the one day right? Monday night I just wasn’t feeling well. At all. Boo. For this particular smoothie, we {Steve} altered the measurements slightly so it’s not identical to the one in the book, but it’s very close. One sip and I fell in LOVE. Turmeric. First of all – who knew it was spelled that way? I always thought it was TU-meric. Did you know how good it is for you? We actually have a mondo Costco-sized container of it (mostly because we use it often in our Indian food recipes). Evidently it’s an anti-inflamatory spice. So if you’ve got stomach issues, and even if you don’t, this is an excellent smoothie for you.
It’s so fresh and perfectly sweet. The pineapple and apple juice adds just the right amount of sweetness. Lets talk pineapple for a second, we had bought from Costco a giant bag of organic pineapple and *just* ran out of it. Well I made a special trip to the store to get another bag and what do you know, in true Costco fashion they were out of one of our fav products. I HATE when that happens… and it seems to happen a lot! I mean it’s not gonna make me stop shopping there or anything but I will say it’s utterly annoying for sure. Anywhoo. Aside from how delicious this smoothie is, it’s actually really pretty! I thought that my Three Ingredient Pineapple Green Smoothie was gorgeous, this is just as beautiful. There’s just something about the color green that makes my heart smile!

This is one I’ve been wanting to try from the book too. I know what you mean about that green… so many of my smoothies come out ugly colors because I just add whatever the heck I reach for into the blender. So when one actually ends up beautifully green, I’m super happy about it.
Try it IMMEDIATELY it’s amazing! We usually don’t have pretty smoothies either, until I’m trying to make it appetizing to share with others – otherwise I’m right there with you :)
