Steve and I love bell peppers. We buy them in bulk at Costco and use them in all kinds of recipes. It makes for a great meal all by itself. We even had leftovers to enjoy the next day. Even if you don’t like peppers, they are still good – just eat the innerds! So flavorful and so tasty!

The perfect stuffed pepper recipe and simple to throw together!
Cook beef and onions until beef is brown, drain. Stir in cooked rice, salt, garlic, and 1 c. of tomato sauce.
Heat oven to 350 F. Stuff peppers. Pour remaining sauce over peppers, cover, and bake 45 minutes. Uncover, sprinkle with cheese and bake another 15 minutes.
