Be sure and check out my Quinoa Stuffed Bell Peppers, Taco Stuffed Peppers,  and Black Bean Stuffed Peppers. When I saw this recipe, I knew it would be one of our favorites. It makes for a great meal all by itself. We even had leftovers to enjoy the next day. Even if you don’t like peppers, they are still good – just eat the innerds! So flavorful and so tasty!
