Steve and I love bell peppers. We buy them in bulk at Costco and use them in all kinds of recipes. Be sure and check out my Quinoa Stuffed Bell Peppers, Taco Stuffed Peppers, and Black Bean Stuffed Peppers. When I saw this recipe, I knew it would be one of our favorites. It makes for a great meal all by itself. We even had leftovers to enjoy the next day. Even if you don’t like peppers, they are still good – just eat the innerds! So flavorful and so tasty!
