I am in love with this Strawberry Coconut Chia Seed Pudding. If you’ve never had chia seeds, or don’t know what they are, here’s a little bit of insight for you: “Rich in omega-3 fatty acids, calcium, and iron, chia seeds are great for weight loss because they act like a sponge, absorbing sugar and stabilizing blood sugar levels, says Kotsopoulos. Because of their high fiber content, the tiny seeds can hold up to twenty times their weight in water, so when they’re mixed with liquid they plump up and absorb excess moisture.” – Fitness Magazine. Ever since I posted my Fruit-On-The-Bottom Chia Seed Pudding last summer I’ve been wanting to make new varieties. With Valentine’s day quickly approaching, I was excited to incorporate the strawberries for a festive & healthy holiday treat! These would be just a beautiful addition to your romantic meal for the big day. Not only does this pudding make a great snack, but it could also be a great breakfast or even dessert! Best part about it is that it’s 100% guilt free!
Strawberry Chia Seed Pudding
Strawberry Chia Seed Pudding is the perfect healthy snack, breakfast or dessert that will not only leave you satisfied, but also provide many healthy nutrients from the coconut and chia seeds. It's delicious! With the strawberries it would also make the perfect Valentine's treat!
Ingredients
- 12 oz. Greek yogurt
- 1 c. full fat coconut milk
- 1 1/2 tbsp. honey
- 3 tbsp. chia seeds
- 1 c. fresh strawberries
Instructions

In a blender, mix together Greek yogurt, coconut milk, honey and strawberries. Blend until well combined. Add chia seeds and mix well once more.

Transfer to a bowl and cover with plastic wrap. Refrigerate for 1 hour, or until set.

Divide the pudding into 10 (1/2 c.) grab-n-go portions. Keep refrigerated.

Hi Renee – I used regular plain yogurt – but you can use either! Whichever you find has the least calories (if that’s what you are going for), would work just great!
