It’s finally fall. Yippee I suppose. Who am I kidding? I’m still hanging on to summer! We will be headed out to our final campout of the season this weekend and I’ll be savoring every second. While I admittedly have a hard time letting go of the insanely hot weather, there is one thing I welcome with open arms: SOUP SEASON! Yes, I do realize you can have soup any day of the year – but there’s something so perfect about it as the weather begins to cool down. I’ve been on a kick lately. Anything SMOKED! You see a friend from work brought in some meat that her husband smoked for hours and hours on end and I nearly lost my mind. It was ah-ma-zing. For realz. A couple of weekends ago we went to the state fair with friends and I was [this] close to being sold a smoker. I wanted it bad. Finally, I attended Feast Portland this last weekend and one of the nighttime events I had the joy of partaking in was Smoked! (that’s the name of the event). Everything was wither smoked or cooked over an open flame. Oh. My. HEAVENLY!!
So I’m sure you’re wondering what ALL of that has to do with my chowder eh? Well as you know I’m a huge Boar’s Head meats fan. Like huge. When I found out they had Boar’s Head SmokeMaster™ Black Forest Ham I almost couldn’t get my hands on it fast enough. With this delicious ham you get to enjoy a flavor rarely experienced in America. Smoked Ham & Corn Chowder
Ingredients
- 3 celery ribs diced
- 1 large onion diced
- 1 large clove garlic minced
- 2 tbsp. butter
- 2 tbsp. whole wheat flour
- 2 c. whole milk
- 1 c. heavy cream
- 2 c. Boar’s Head SmokeMaster™ Black Forest Ham diced
- 2 large russet potatoes peeled and cut into 1-inch cubes
- 1 14 3/4 ounce can cream-style corn
- 1 1/2 c. frozen corn
- 6 scallions chopped
- 1/2 tsp. salt
- 1/4 tsp. dried thyme
- 1/4 tsp. dried oregano
- 1/4 tsp. pepper
Instructions

Boil water; meanwhile peel and dice potatoes. Boil for about 10-15 minutes.

Meanwhile, dice up ham, onion, celery.

In a large saucepan, saute the onion and celery in butter until softened. Stir in the flour and stir until well blended, then gradually add milk and cream.

Bring to a boil while stirring until thickened, about 2 minutes.

Stir in remaining ingredients and bring to a boil.

Reduce heat, cover and simmer about 15 minutes or until heated through.
