I have yet to meet someone who doesn’t love a good salsa recipe. In fact, I have a friend that I work with who loves chips and salsa so much, she has no shame in considering it a meal. I’m right there with her too! There’s been more than one occasion where I’ll choose some yummy salsa with my favorite chips over a casserole or boring lunch or dinner any day! When I heard that Pacific Foods was launching a new line of organic tomatoes I was thrilled. They graciously sent me a sampling of the Pacific Organic Crushed Tomatoes, Pacific Organic Tomato Sauce, Pacific Organic Strained Tomatoes and Pacific Organic Diced Tomatoes. If you’ve followed along here or more recently on my Instagram stories, you’ve seen and read how important buying organic is to Steve and I. I couldn’t wait to dive in and start using the wide variety of tomatoes in my kitchen.

Things lately around the Feld household have been chaotic as usual, which means that we try to make meals and snacks as simple as possibly without sacrificing on taste. I kid you not when I tell you we had grilled cheese sandwiches and Pacific Tomato Soup for a week straight for every meal but breakfast. We alternated between the Organic Creamy Tomato Soup and the Organic Roasted Red Pepper and Tomato Soup and blew through FIVE cartons over the week! We’ve also been on a salsa kick and while store bought is fine, there’s something about fresh homemade salsa that can’t be beat. So I went to work on putting together a quick and easy blender salsa recipe that’s packed with flavor. I used the Pacific Organic Crushed Tomatoes for this recipe, but you could easily use the diced tomatoes just as well. Now that we are hot on the heals of warm weather I can guarantee I’ll be keeping this recipe handy for the many get togethers, bbqs, picnics and potlucks that will soon be taking over the calendar – and I can’t wait!

Ingredients

  • 1 26.46 oz box Pacific Organic Crushed Tomatoes
  • 1/2 white onion roughly chopped
  • 1 jalapeno seeded & roughly chopped
  • Cilantro to taste
  • 4 oz. fire roasted green chiles
  • 2-3 cloves garlic

Instructions

  1. Place all ingredients into your blender. Blend on high for approx. 30 seconds or until pureed to desired consistency. Serve with chips.
