I need more shrimp recipes. That’s just all there is to it. It’s one of my most favorite foods, yet I rarely cook with it. It doesn’t help that the hubs doesn’t like it – so it’s rare for us to buy it. But I love it! I knew I wanted a yummy delicious salad to pair with my Classic Lorraine Quiche from La Terra Fina. I figured a Caesar salad would be the perfect compliment. But not just any Caesar salad, one that was packed with flavor but not packed with calories. Generally Caesar dressing is known for it’s high calorie content made with mayonnaise and olive oil. Today I’m switching things up to help loosen the waistband. I don’t know about you, but whenever I find a delicious alternative to one of my favorite unhealthy indulgences I’m all over it.
So how many of you have had quiche before? I only had a couple of times before anxiously diving in to this classic. So what is quiche? It’s a baked flan or tart with a savory filling thickened with eggs. Sound interesting? It’s definitely worth a try. The La Terra Fina classic is made with egg whites. One bite and I was in heaven! The bonus was knowing what I was eating wasn’t made with any artificial colors or flavors. SCORE! It’s ready in less than a half an hour, and even faster if you decide to microwave it (I’d recommend waiting for it to be oven baked – it will be all the better). Just pop this baby in the oven while you prepare your salad and in less than 30 minutes you can have a delicious meal that’s sure to please everyone at first bite!
Shrimp Ceasar Salad
Ingredients
- Salad
- 2 c. chopped romaine lettuce
- 2 tbsp. shredded Parmesan Reggiano cheese
- 1½ lbs. medium shrimp cooked and peeled
- ¾ c. grape or cherry tomatoes halved
- ¾ c. whole wheat seasoned croutons
- Dressing
- 3 tbsp. Greek yogurt
- 2 tbsp. fresh lemon juice
- 1 tsp. grated Parmesan Reggiano cheese
- ¼ tsp. black pepper
- ½ tbsp. minced garlic
- ½ tsp. apple cider vinegar
Instructions

Combine all of the dressing ingredients in a bowl and stir with a whisk. Chill until ready to use for salad.

For salad, combine all ingredients in a large bowl. Toss lightly to mix. Cover salad with dressing and toss well to coat. Serve immediately.
