I’ve always been a HUGE fan of macaroni salad. For as long as I can remember it’s been the one side dish that I look forward to all yearlong leading up to summer BBQ’s. There’s something about it that I feel like just compliments grilled grub so well. When I learned that Westminster Cheddar just launched a non-GMO British Cheddar I was thrilled to develop a recipe with it! I knew I wanted something summery that would be great for your upcoming get-togethers. Voila, this Sharp Cheddar Macaroni Salad was created and it is absolutely delicious!
You’ll get a burst of flavor in each bite thanks to the bold and distinguished taste of the Sharp Cheddar, which plays wonderfully with all of the complimentary flavors of this salad. As you may know, eating good clean food is extremely important to me, and I was thrilled to learn that Westminster offers a number of fully accredited, non-GMO cheeses, including the Sharp Cheddar used in this recipe. Being non-GMO means that the cheeses are made with milk from dairy herds not fed with feed containing GMO’s, and similarly that the rennet used in the cheese making process is also verified as non-GMO. Remember, it’s not only important what you eat, but also what you eat, eats!
I also loved knowing that the cheese was produced in England and I couldn’t help but feel somewhat transported there while enjoying this cheese. Food is such a meaningful part of any country and culture in the world and seems to have a way of capturing and reflecting that culture in the flavors that it presents. I loved taking my palate “abroad” so to speak.
Sharp Cheddar Macaroni Salad
- 1 pkg macaroni noodles
- 2-3 green onions, chopped from top to bottom
- 1 (2.25 oz.) can sliced olives
- 2-3 celery sticks, finely diced
- 1 pkg. (16 oz) fully cooked cubed ham
- 1 pkg. Westminster 12 month aged Sharp Cheddar, cubed
- 1 c. mayonnaise
- 1 c. miracle whip
- Cook macaroni noodles according to package directions. Rinse, cool and set aside. Add green onions, olives, celery, cubed Westminster 12 month aged Sharp Cheddar, mayo and miracle whip. Stir together until well combined. Refrigerate until ready to serve. Enjoy!
