Rocky Road Brownies
Rocky Road Brownies are an ooey gooey chocolate combination of pure wonderful. These brownies have it all.
Ingredients
- 1/2 c. 1 stick butter
- 2 oz. unsweetened chocolate chopped
- 1 c. sugar
- 2 large eggs slightly beaten
- 1 tsp. pure vanilla
- 1/2 c. all purpose flour
- 1/4 tsp. salt
- 1 c. chopped walnuts
- 1 pkg. marshmallows
Fudge Frosting
- 1 3/4 sticks butter
- 4 tbsp. cocoa powder
- 6 tbsp. milk
- 1 tsp. vanilla
- 1 lb. powdered sugar
- 1/2 c. finely chopped pecans or walnuts optional
Instructions

Position a rack in the middle of the oven. Preheat oven to 325 F. Butter and flour an 8" square baking pan.

Melt butter and chocolate in a heatproof bowl set over a saucepan of about 1 1/2" of nearly simmering water, whisking until smooth. Or melt in a microwave, watching closely. Remove from the heat, add sugar, eggs, and vanilla, whisk until blended.

Whisk in the flour and salt just until well blended. Stir in the walnuts. Transfer batter to the prepared floured pan.

Bake for 30-40 minutes, or until a toothpick inserted in the center comes out slightly sticky (but not too wet). Do not over bake. The edges will start to pull away from the pan when just about done.

Add mini marshmallows to the top of the brownies and put back in the oven for a few minutes longer (just until slightly melted, do not brown). Let cool for 5-10 minutes, and spread or drizzle fudge frosting over the top. Cool 20-30 minutes before cutting.

For the fudge frosting: melt the butter in a medium sized saucepan over medium-low heat. Add the cocoa powder and stir until smooth. Add the milk, vanilla and powdered sugar. Whisk until very smooth.

Frosing: Makes enough for a double batch of brownies in a 9x13 pan
Definitely wait until the marshmallows have cooled before topping the brownies with the sauce. Otherwise you will end up with brownies like my picture, very, very runny! I just couldn't wait until they were cooled and then as a result they were practically a sticky mess! Delicious none the less :)

I had a question in regards to it calling for two separate cups of sugar. Is this an error? It seems like a lot of sugar in proportion to the amount of flour. Just checking before making.
