I have been getting fruits and veggies through a co-op for the last month and it is like a surprise basket each week. This Saturday my basket included Blue Potatoes, which are actually more purple. I went looking online for recipe ideas and there are mashed or roasted (or red, white, and blue potato salad for July). So then I came back to my favorite food blog of all to see what you had for just general potato recipes and BAM, this one is it! I made these Sunday night with my Blue Idaho Potatoes and they were excellent! Thanks again for always having the perfect recipes.

We have tried Bountiful Baskets once before and it was a lot of fun. I don’t remember what we got but I do remember there were a couple of things I would never buy on my own. It was fun to have them to try and experiment with. Blue potatoes? Interesting! So happy you found exactly what you were looking for here. Yay!

I was looking for a good recipe to go with grilled chicken, so I tried these and they were fabulous! I was a little nervous making them because I had guests over, I don’t like trying new recipes for guests but I am SO glad I did! They loved them and so did we! I’m adding these to my list of side dishes that I will regularly make! Thanks Von!

Ok Yvonne I tried these potatoes tonight! They were fabulous! Blake was home from college this weekend and he said they were the best potatoes he has ever had. They were better than french fries! I have to agree! Now that is saying something. What I also noticed that I liked was that they weren’t greasy. The bread crumbs and mozzarella must absorb the oil. These were a hit and I can’t wait to make them for Glenn and Brad! Thanks again for sharing!

That’s so great they turned out so good for you! They are yumm-o as Rachael Ray would say :) I would have to agree they are way better than French fries, they are so easy to just keep eating! You are always welcome.

Yummo, I am doing these tonight! I love potatoes, especially red potatoes! We oven roast them all the time but I have never used bread crumbs and parmesan cheese before. Thanks for the recipe!
