I’ve been dying to make a healthy cookie dough for some time now. I love cookie dough and could eat it all day every day. That doesn’t really line up with my health and fitness goals, so I looked for an alternative. These were absolutely perfect! Remember the Lily’s Sweets Dark Chocolate Premium Baking Chips I used in my No Bake Peanut Butter Pie & Almond Joy Granola? I used them again in these bites. They are fantastic! I love them so much!
I was also inspired by the crust of my No Bake Peanut Butter Pie for the slight alterations to the original recipe for the base of the cookie dough bites. Mmmm.. Mmmm! They are so yummy! They are the prefect size to enjoy a couple to curb your sweet tooth. I used my Stainless Steel Scoop for the ideal ‘bite sized’ portion. I doubled the batch to ensure I had enough to give to all my neighbors.
Raw Chocolate Chip Cookie Dough Bites
These Raw Chocolate Chip Cookie Dough Bites are a great alternative to regular chocolate chip cookie dough balls. They are equally healthy and delicious!
- 1/3 c raw cashews
- 1/3 c. raw walnuts
- 1/3 c oats
- 2 tbsp. honey
- 1 Tsp Vanilla Extract
- 1/4 c Lily's Dark Chocolate Premium Baking Chips
In a high speed blender or food processor, blend the cashews, walnuts and oats, only until a fine powder consistency is reached. Any longer and you'll create a nut butter.
Add the honey and vanilla and blend until incorporated. Blend in short bursts and only until combined; don't over-process.
Stir in the Dark Chocolate Premium Baking Chips by hand. Scoop into balls and serve.
Keep refrigerated if not served immediately or for storage.
