One of my least favorite things to do is figure out what to eat for lunch or dinner. Well, let me explain. I enjoy meal planning for the most part. What I don’t enjoy is when I am in a hurry, open the fridge, and can’t find a darn thing to eat (even though it’s stocked full of groceries). I’m typically in a hurry on my lunch hour so I either need to plan ahead or have something readily available that’s quick and easy to throw together. Everyone loves a good sandwich right? A few of my favorite sandwiches are my Turkey Sandwich with Bacon & Avocado, Grilled Chicken and Pineapple Sandwich, and The Gobbler.
There is just something about turkey being paired with avocado and Swiss cheese that is just a knock-out combination. I love a quick and easy sandwich that doesn’t take a lot of time but tastes fantastic. This reminds me of something you’d find at a specialty sandwich shop – even being as simple as it is. The cherry on top are the sprouts. Back in my Get Healthy in 2014: Kitchen Basics Part 1 post, I talked about how amazing sprouts are. We’ve had them on hand for most of the winter just growing on our counter top. Even though they take up counter space I wish I could be using for other things… I’m grateful to have them anyway! You’ve gotta make this sandwich. It’s so delicious!

Recipe Notes
The avocado makes it so you don't need to add any additional condiments like mayo - helps not only save some calories but also replaces them with healthy fats. I chose a french baguette, but of course you can use your bread of choice!
