I’m so excited to bring you quick & easy recipes this summer to help you spend a little less time in the kitchen and a little more time with your family enjoying the beautiful weather! Nothing screams summer to me more than fresh, crisp, delicious seasonal produce. One of my favorite things to do in the summertime is to hit up my local farmers markets and stock up on yummy homegrown fruits and veggies. The idea is to shop often to not waste any of the fresh produce, but… that doesn’t always happen. Sadly, we end up wasting a LOT of food because we just can’t get to it fast enough.
When I found out that OXO makes GreenSaver Produce Keepers I couldn’t have been more excited. *If* it worked, it would be the answer to our frustrations in wasting way too much food. Pair that with a shipment of Melissa’s Mini Cucumbers and I just had to try it for myself. Never heard of Melissa’s Produce? I was anxious to test out the cucumbers in my nifty OXO Greensaver to see what the results would be!
I vowed to leave my mini cucumbers in my OXO GreenSaver for one week. After one week of cucumbers being in my produce drawer they are always mushy, gushy, and headed straight in to the garbage. Evidently I’m not alone in that because more than 25% of fruits and vegetables purchased by U.S. consumers are wasted annually become being consumed. That’s equal to 226 pounds per the average family. Yikes!
The cool thing about the GreenSaver is that it absorbs ethylene gas, promotes air flow (with an elevated basket inside the container), and controls humidity (with the vent on top). For more details information, head here to read more!
After ‘setting and forgetting’ my cucumbers, which believe me was NOT hard for me to do. I’ve been running here there and everywhere it’s hard to know which way is up! In fact, I actually DID forget about them. When I was ready to pull them out for my delicious side dish I was eager to see how they held up.
There was a little condensation in the bin which made me a little nervous – but one look at the cucumbers and they were perfect. I knew before even cutting in to them that it had in fact worked! Pretty darn cool of you ask me. Especially for someone who buys a LOT of produce, having a fridge stocked of these GreenSavers would be a lifesaver. I had the most crisp & probably most delicious cucumbers I’ve ever had and a tasty recipe to boot. I’d say that’s definitely a win!
Quick & Easy Cucumber Salad
If you're looking for THE perfect side to your BBQ menu, look no further - this cucumber salad couldn't be easier OR tastier. You've got to try it to believe it. Your guests will be begging for seconds AND the recipe!
Ingredients
- 2 c. chopped peeled cucumber
- 1/4 c. plain greek yogurt nonfat or 2%
- 1 tbsp. dill more or less to taste
- Salt & pepper to taste
Instructions

Mix together chopped cucumber with remaining ingredients. Enjoy!

I make cucumber salad alot in the summer, only I use sour cream, white wine vinegar, dash of sugar, garlic salt and pepper. Fresh chopped parsley, oh and thinly sliced sweet onion. Yum

I would like to know more about the “OXO” container you mentioned today. I’ll try to find their website, if they have one? I am throwing away heads of lettuce at an alarming rate! What do you recommend for a lettuce saver? Your cucumber salad looks delicious, but my husband doesn’t like Dill. Can you recommend any other flavoring, please?

It’s AMAZING! You can find all the great nitty gritty details about the Greensaver here: greensaver.oxo.com! They have several different sizes to accommodate the different produce – I highly recommend! As far as not liking the dill, I guess it would depend on what flavor you’d like to go for – you could try an italian seasoning perhaps or maybe a basil?

I’ve made this for years. Instead of dill, try it with mint! It’s refreshing as well as delicious!
