Pumpkin Buttercream // This pumpkin buttercream frosting is great for cookie, cupcakes, macarons, cakes.. yum! | Tried and TastyI recently attempted for my first time French Macaroons. Any idea what they are? Here’s a great description of what they are. They are one of the prettiest cookies that I’ve seen and I have been wanting to make them for quite some time now. The thing is, they are tricky little buggers and a whole lot of work (well at least I thought so). With that said, together with my blogging buddy Jess we attempted and succeeded at making them! So much fun. I’ll have that recipe for you a little later on. For now, here’s what I filled them with. Pumpkin Buttercream Frosting. It’s pretty much AMAZING.

This Pumpkin Buttercream Frosting is good on so many things - cupcakes, cookies, and cakes!  Yum!

Ingredients

  • 1/2 c. butter softened
  • 1/2 tsp. pumpkin pie spice
  • 1/2 tsp. vanilla extract
  • 1 1/2 c. powdered sugar
  • 1 tbsp. pumpkin puree

Instructions

  1. In the bowl of a stand mixer, beat softened butter for 2 minutes. Add pumpkin pie spice and vanilla extract and slow add powdered sugar until you reach your desired consistency. Add pumpkin puree and beat until fully incorporated. Add more powdered sugar as needed.

This frosting can be used on anything! One taste and you'll see why :)

    Cecilia– did you try it on the chocolate cake? I’m looking for a frosting to go with a yummy chocolate cake for Thanksgiving. Was thinking the pumpkin would be festive :)

      Yes I did and it was very good. I think it’ll depend on how chocolaty your cake is but everybody liked it a lot.

    I’m going to have to try this! Pumpkin buttercream sounds amazing. I’m impressed that you had macaroon success on the first try! My first macaroons were a HUGE flop :)

      YES!! Try it!! I couldn’t BELIEVE that our macaroons worked out – I watched lots of youtube videos in preparation, but was still stressed the entire time until we pulled them out of the oven!
