I’m on a roll with the chia seed puddings. It all started with my Fruit On The Bottom Chia Seed Pudding from last summer. A couple of days ago I brought you my Strawberry Coconut Chia Seed Pudding. Today I’m bringing you another gorgeous favorite: Pomegranate Coconut Chia Pudding. I’m telling you, this pudding is such a great snack, breakfast, or even dessert. It’s pretty much amazing any time of the day! The best part about it is that you can whip it together in just a matter of minutes.
It’s really easy to portion control too! I used the Glad Mini Rounds that were perfect for a quick grab-n-go snack! 1/2 c. will be around 100 calories. This pudding is so delicious it would be easy to eat more than the recommended size, so dividing it right away eliminates the temptation! By adding the beautiful pomegranate seeds this makes for a fantastic Valentine’s day treat! I’m all for presentation, and you can’t get much better than this!
Pomegranate Coconut Chia Pudding
Pomegranate Coconut Chia Pudding is the perfect healthy snack that will not only leave you satisfied, but also provide many healthy nutrients from the coconut and chia seeds. It's delicious!
Ingredients
- 12 oz. Greek yogurt
- 1 c. full fat coconut milk
- 1 1/2 tbsp. honey
- 3 tbsp. chia seeds
- 1 c. pomegranate seeds
Instructions

In a large bowl, mix together Greek yogurt, coconut milk, and honey. Stir until well combined. Add chia seeds and mix well once more.

Cover with plastic wrap. and refrigerate for 1 hour, or until set.

Divide the pudding into 10 (1/2 c.) grab-n-go portions, sprinkle with pomegranate seeds. Keep refrigerated.

I can’t have yogurt. Do you have other suggestions on what i can use? Will Almond Milk work?

Hmm.. you really need the consistency of yogurt in order for this to work – Almond Milk will not yield the correct result. Shoot! I don’t know what you could use to sub instead… I’m sorry!
