It’s hard for me to pick a favorite between my Honey Almond Granola Recipe, Honey Apple Granola, Coconut Almond Granola, Coconut Butter Granola, and Easy Toss & Bake Granola. My favorite way to enjoy them is topped with 1/2 c. of plain regular or Greek yogurt. Parfaits with fruit like my Fruit & Yogurt Parfait with Honey Almond Granola are also a great way to enjoy granola. This peanut butter granola however has been a nice switch up from the others. It has a yummy sweetness that I like. Since I’m trying to stay away from sweets and treats, it’s a really good alternative. You’ve got to give it a try!

Peanut Butter Granola
This Peanut Butter Granola is a great way to start your morning. Make ahead to have a quick breakfast on the go ready all week!
Ingredients
- 2 c. old fashioned rolled oats
- 1/3 c. sliced almonds
- 2 tbsp. ground flaxseed
- 1 tsp. cinnamon
- 1/2 c. dry roasted unsalted peanuts optional
- 1/2 tsp. salt
- 1/3 c. real maple syrup
- 1/4 c. natural peanut butter
- 2 tbsp. coconut oil
- 1 tsp. vanilla
Instructions

Preheat oven to 450 F.

In a large bowl, combine all of your dry ingredients. Mix well.

Heat syrup, peanut butter, coconut oil, and vanilla in a saucepan over medium-high heat, stirring until smooth. Add to oat mixture; toss to coat.

Spread on a foil, parchment, or silicone lined baking sheet. Bake 7-9 minutes stirring after 5 minutes.

Remove from oven & cool completely.

How much is a serving size of the peanut butter granola? I made it, and it’s very good, but I’m tracking my sodium and potassium, so need to know how much it is, if at all possible. Thanks!

Well, since it appears that no one is tending to this website, I found another recipe that gives the serving size along with the nutritional data, so I’ll be unpinning this one. Thanks anyway…….
