Show of hands who has all the time in the world and can spend countless hours on dinner each night? Crickets? Crickets? That’s what I thought.
These days, no one has that kind of time, unfortunately. I mean, if I had my choice, I certainly would LOVE to make elaborate meals for dinner every night. It’s just not the way it is and that’s OK. That’s why one pot meals are a saving grace for those busy weeknights! I snagged a jar of Prego® Homestyle Alfredo the other day at the grocery store with one goal in mind: a quick and easy dinner that I could pull together after work in a jiffy. Sure fettuccine Alfredo is super simple, but I wanted something more… something a little more elevated… something more filling.
So, I picked up a few more ingredients with the perfect meal in mind. What were my goals again? One pot.
I only wanted to cook with one pot and not have to plan to spend an extra half-hour to an hour in the kitchen afterwards cleaning up after dinner.
Mission accomplished? Yes! Quick. I wanted something ready in less than 30 minutes. I got off from work a little later and didn’t want to push mealtime into my bedtime – so I needed it to be fast!
Mission accomplished? Yes! Easy. I wanted something with five ingredients or less that still provided texture, variety, flavor and substance.
Mission accomplished? Yes! Take a look at just how easy this delicious meal was to throw together:
All you need are these five ingredients: Prego Homestyle Alfredo, three cheese tortellini (I found mine in the cold case next to the cheeses), broccoli (washed & chopped), diced chicken breast & shredded Parmesan cheese for garnish!
Boil your tortellini according to your package directions and throw the broccoli in at the same time. It should only take about 7-9 minutes.
In a colander, strain water and set aside while your chicken cooks.
Once your chicken is fully cooked through, add your tortellini and broccoli back to your pan.
Pour over top your Prego Homestyle Alfredo.
Cook for an additional minute or two to heat sauce through and then garnish with shredded parmesan.
This is best if served right away and great with a garden salad and fresh bread! The perfect weeknight meal ready in less than 30 minutes! Mission accomplished!
