I ran across a blog that had transformed the German Pancakes into a miniature version and immediately fell in love with the idea! Mini? Hello, you know I was all over that :) They were just as easy as the larger version I just evenly divided the batter in 12 muffin tins.
Mini German Pancakes
German Pancakes are a delicious light, golden crepe and is wonderful served with maple syrup, your favorite fruit preserves, or powdered sugar! These are the mini version of my German Pancake recipe, and they prove that great things can come in small packages!

Ingredients
- 1/2-1 stick butter
- 1 c. milk
- 6 eggs
- 1 c. flour
- 1/2 tsp. salt
Instructions

Heat oven to 425 F. Melt butter in a 9x13 pan while oven preheats.

In a blender, mix eggs and milk; add flour and salt and blend again. Pour mixture into pan with melted butter.

Bake 15-20 minutes. The batter will rise but not run over.

Cut in squares and serve as French toast with syrup and powdered sugar.
