The perfect quick & easy weeknight meal! | Tried and TastyFirst of all I need to credit Angela for this great recipe for meatballs, I mis-credited a previous recipe she was responsible for and I was given a hard time ;) So, with that said, these meatballs are AWESOME! Well, the sauce anyway – I took the easy route on the actual meatballs and just used Costco’s frozen Italian meatballs which are mag-ni-fi-que!

Homemade meatballs in your favorite BBQ sauce over rice. The perfect quick & easy weeknight meal!

Ingredients

  • 2 lb. ground beef
  • 1 chopped onion
  • 1 c. breadcrumbs
  • 1/4 c. parsley
  • 2 cloves garlic minced
  • 1/2 tsp. black pepper
  • 2 eggs beaten

Sauce

  • 1 1/2 c. bbq sauce any flavor
  • 3/4 c. tomato paste
  • 1/3 c. brown sugar
  • 1/2 c. water as needed

Instructions

  1. Combine meatball ingredients and form into balls. Bake in a dish at 350 F for 20 minutes or until brown.

  2. Drain any grease. Combine sauce ingredients and mix well. Add meatballs and stir to cover.

  3. Cook in the crockpot on low for 4 hours or in the oven at 350 F for 15 minutes or until warm. Serve on toothpicks as appetizers, on subs for sandwiches etc.

    OMGoodness!! I made giant meatballs stuffed with cheddar cheese (I live in Wisconsin. Everything has to have cheese!) and cooked them on the grill. When they were done, I rolled them around in Angela’s sauce and put them back on the grill. They were delicious!! Can’t wait to make them again! Thanks Angela!!

      Meatballs stuffed with cheese coated in bbq sauce?? Well doesn’t that sound delightful! I love the idea of grilling the meatballs, I don’t think I ever would have thought of that.
