Summer is nearing the end and I am holding on with all my might to every fleeting moment. Having outdoor dinner parties are one of my favorite summertime activities. You know the ones where the buy massive amounts of healthy food in giant sizes? Those are my fav trips! I specifically enjoyed this Chef Crafted Snappy Spinach Salad – it’s simple, wholesome and easy to ‘dress up’ with grilled lemon-citrus chicken and my healthy Low Calorie Dijon Dressing. The best part about the salads is that they are an easy, healthy alternative to your typically unhealthy fast food options. As you can see, they are beautiful enough to serve along side a delicious meal that the family AND your guests will enjoy!
Low Calorie Dijon Dressing
Ingredients
- ½ c. olive oil
- ¼ cup white balsamic vinegar
- 2 tbsp. prepared Dijon mustard
- 1/4 tsp. onion powder
- 1/4 tsp. salt
- 1/4 tsp. black pepper
Instructions

In a blender, blend together all ingredients until smooth.

The dressing is delicious but how much is “calories per serving”? In general the nutritional quantities are based on 100 grs or 100 mls…. what do you consider a serving or portion? They vary according to the person serving them. Not a very reliable or scientific measure.
