Oh I am giddy over todays post for you! I love, love, love cookie dough. Well. Let’s be honest. I love any kind of sweet or treat you put in front of my face. However. My waistline doesn’t. With National Chocolate Chip day tomorrow, I have a fun recipe that I will be sharing with you (Gluten Free Cookie Dough Blizzard) – but I needed to show you how to make the dough first! Talk about winning recipe: no white flour AND no white sugar. Score!! The quest continues to eliminate those two icky ingredients from my cooking entirely and I must say, there is a LOT of goodness in the world that doesn’t involve them surprisingly. If you would have told me that before my health transformation I would have laughed in your face.
If you are a cookie dough fan, but not a fan of all the calories - sugar - and added lbs that cookie dough brings, you must try these! These Gluten Free Cookie Dough Bites are absolutely delicious. Made without ANY white flour or white sugar. Who said you have to give up all things delicious when you want to be health conscious?
Whisk in the milk, coconut sugar, maple syrup and vanilla until well combined. Add the flours and salt. Taste and adjust sweet if needed, or add more flour or oil for the soft sticky, but not too sticky dough. Be careful not add too much flour, they dry out as they chill.
Fold in the carob or chocolate chips and mix. Using a small cookie scoop, scoop onto a parchment sheet.
