Oh I am giddy over todays post for you! I love, love, love cookie dough. Well. Let’s be honest. I love any kind of sweet or treat you put in front of my face. However. My waistline doesn’t. With National Chocolate Chip day tomorrow, I have a fun recipe that I will be sharing with you (Gluten Free Cookie Dough Blizzard) – but I needed to show you how to make the dough first! Talk about winning recipe: no white flour AND no white sugar. Score!! The quest continues to eliminate those two icky ingredients from my cooking entirely and I must say, there is a LOT of goodness in the world that doesn’t involve them surprisingly. If you would have told me that before my health transformation I would have laughed in your face.
Really though, if you need a little inspiration and help getting the not-so-good ingredients out and get more of the good-for-you ingredients in, you should check out my Healthy Chocolate Zucchini Muffins (which have been wildly popular), Nutty Salted Caramel Coconut Ice Cream, and Strawberries & Chocolate Buttercream Mousse… to name a few. Oh, and let’s not forget the other great raw cookie dough recipe too! These Raw Chocolate Chip Cookie Dough Bites are heavenly as well! So what are you waiting for? Need to know how to make your own oat flour or almond flour? I’ve got you covered! It’s easy peasy!
Items used in this post:
Gluten Free Cookie Dough Bites
Ingredients
- 2 tbsp. coconut oil
- 2 tbsp. milk of choice almond or coconut
- 1/4 c. coconut palm sugar
- 1/8 c. pure maple syrup
- 1/2 tbsp. pure vanilla extract
- 1/4 tsp. salt
- 1 c. oat flour certified GF
- 1 c. almond flour
- 1/3 c. carob chips or mini chocolate chips
Instructions
-
In a large bowl, melt the coconut oil.
-
Whisk in the milk, coconut sugar, maple syrup and vanilla until well combined. Add the flours and salt. Taste and adjust sweet if needed, or add more flour or oil for the soft sticky, but not too sticky dough. Be careful not add too much flour, they dry out as they chill.
-
Fold in the carob or chocolate chips and mix. Using a small cookie scoop, scoop onto a parchment sheet.
-
Refrigerate until set.

One of my biggest hestiations when people do a no-cook cookie dough treat is the inclusion of uncooked white flour — this is a fabulous and safe alternative! Thank you for sharing!
