I’m starting to sound like a broken record I’m sure, but seriously I LOVE breakfast. Yep. Love it. When I made my Honey Almond Granola Recipe I knew exactly what I wanted to do with it. What’s better than a parfait in the morning with your favorite fruit, some yogurt and the yummiest granola? Not much. This parfait is top notch in my book. I’ve had it almost every day for the last week and there’s no stopping me. Although, before too long I will need to incorporate something else in the rotation (I’ve snuck in a few of the Quick & Easy Baked Egg Breakfast cups here and there as well, they are a great make ahead to have for quick grab-n-go). Can you make this ahead of time (such as the night before) and refrigerate overnight to eat in the morning? Or will the granola become soft?
It’s delicious! I actually wouldn’t put the parfait together ahead of time – you can make the granola the night before and chop your berries – but wait till morning to put it all together. Otherwise, yes, the granola will become soggy and won’t be great. Enjoy!
