Alright, we are nearing the end of January. Show of hands how many of you are hard at work keeping your New Year’s resolutions? Often I find that resolutions are easy to make but difficult to maintain. I’ve learned a few things over the course of my health journey and one of them is: preparation is key! One of the things I’ve resolved to is “Healthy Snacking in the New Year”. Over the holidays it was so easy to grab any snack I could find for munching whether it be healthy or not (and lets be honest, it was more unhealthy than not). Now that we are in the swing of the new year, I’m focusing on healthy snacks as an easy way to improve the quality of my diet. Especially by adding in the ‘Feel Good Fruit’ to my favorite snacking recipes.
Feel good via the deliciously tasty and uniquely nutritious fruit – the prune. For my fruit & nut energy bites I wanted to switch things up a bit from dried cranberries (which I would normally use). Instead I decided to grab Amaz!n™ Diced Prunes! They are new and make for delicious nutritious snacking. Did you know prunes may promote healthy bones? I read that Dr. Bahram H. Arjmandi of Florida State University says, “Dried plums (prunes) are the most bone-friendly fruit that I have seen in decades. They are nature’s solution to maintaining good bone health.” Dr. Arjmandi hypothesizes that the many compounds and nutrients contained in prunes, such as vitamin K, potassium, copper and boron, likely work synergistically to have this positive effect. Too cool right?
The nice thing about them is because they are diced, Amaz!n™ Diced Prunes are easy to toss them in cereal, oatmeal, salad or your favorite recipes for added flavor and fiber. I chose to throw them in my fruit & nut energy bites and they were perfect! By adding them to my favorite snacking recipe I was able to get extra fiber and a fruit flavor boost!
Ingredients
- 1 tbsp. chia seeds
- 1 tbsp. ground flax seeds
- 1 1/2 cups old-fashioned oats
- 1 c. NEW Amaz!n™ Diced Prunes
- 1 c. shelled pistachio nuts
- 1/2 c. unsweetened coconut shredded
- 1/4 c. tbsp. sunflower seeds
- 1/2 c. honey
Instructions

In a large bowl, stir together all dry ingredients (everything but the honey). Add honey and mix until evenly combined.

Cover and refrigerate for at least 30 minutes.

Use a spoon or cookie scoop to shape it into your desired size of energy balls.
