As I write this, it’s 93 Degrees outside, people are grilling in their backyards, and the smell of fireworks is in the air which could only mean one thing.. it’s Independence Day! The 4th of July! The birth of American Independence! On this day in 1776, congress formally adopted The Declaration of Independence – a document penned by a small committee, which included legendary figures such as Thomas Jefferson, John Adams, and Benjamin Franklin – a document which made clear the intentions of this great Country. Intentions to draw a definitive line between America and Great Britain, resulting in the birth of a new & independent nation!
There are all kinds of great ways to celebrate this significant day, but I’m celebrating it in the most delicious way possible. With this juicy, mouth watering Berry Tart! It’s full of vibrant reds and blues (provided by flavorful berries), contrasted with brilliant white (whipped cream and powdered sugar). It just might be the most patriotic looking recipe out there.
But remember how I mentioned that it’s 93 degrees today? The last thing I wanted to do was fire up the kitchen oven and introduce even more heat into the house. Instead, I turned to my super versatile Traeger wood fired grill which is located outside on my deck. When most people hear ‘Traeger’ they think smoker – and while it’s certainly true that the Traeger is an outstanding smoker, it’s also so much more. Thanks to computer controlled auger, wood pellets are fed into the fire pot at precisely the right moment, in precisely the right quantity in order to maintain the desired temperature. This means that virtually anything that can be cooked in your kitchen oven can also be cooked in a Traeger – oftentimes with even better results!
During my time with my Traeger grill, I’ve come to a powerful realization.. How you cook is as important as what you cook. In other words, a recipe is not simply the sum of its ingredients. It’s also the sum of how those ingredients are heated and prepared. Cooking with a variety of wood pellets such as alder, cherry, hickory, or mesquite allows you to subtly infuse those wonderful flavors into your dish as you cook it. Propane and electric heat sources are much more plain and “lifeless” in comparison.
But this Red, White, and Blue Berry Tart is anything but lifeless! It’s bold, bright, and flavorful and would be the perfect grand finale to any meal on this wonderful day of Freedom! Let’s dig in, shall we?
Easy Mixed Berry Tart
Throw together your a mix of your favorite berries into a crunchy pastry crust and you've got an out of this world Mixed Berry Tart! Great for those patriotic holidays and all summer long.
Ingredients
- 1 lb. strawberries
- 1 pint raspberries
- 1 pint blackberries
- 1 pint blueberries
- 1/8 c honey
- 1/8 c lemon juice
- 1/3 c mixed berry spreadable jam
- 2 sheets puff pastry
Instructions

Preheat Traeger Grill to 375 degrees F.

Mix together lemon juice and honey. Drizzle over fruit. Mix well to coat evenly; set aside.

Prepare your tart by rolling your pastry into a 9x12 rectangle. Transfer to a cookie sheet or baking stone.

Spread an even layer of mixed berry spreadable jam along the bottom of the crust, avoiding the edges. Layer mixed berries evenly over the jam.

Bake 45-50 minutes (depending on whether you're using a cookie sheet or stoneware) until golden brown. Remove from grill, let cool 10 minutes.

Dust with powdered sugar (optional) Serve with whipped cream or ice cream. Enjoy!
