The last time I made my Chicken Tacos with Mango-Pineapple Salsa I realized that I hate pulling and shredding a whole rotisserie chicken. It takes FOREVER! Not only that, the slimy griminess of it all is almost enough to turn me off all together. Did you know that Costco sells shredded rotisserie chicken that has been removed from the bone for you? Um. Yeah. Neither did I until recently. I had no idea. You better believe that I made a bee-line directly to it on our last grocery shopping trip. So do you need quick and easy dinner ideas? It comes together in no time flat and is loaded with flavor. Ready in less than 30 minutes makes this the perfect recipe for your family!
Dinner Ideas: Quick & Easy Chicken Tostadas
Chicken Tostadas that are as delicious as they are easy!
Ingredients
- Ezekiel Sprouted Corn Tortillas
- 1 can refried beans
- Shredded rotisserie chicken
- Lettuce shredded
- Cheddar cheese shredded
- Cherry tomatoes chopped
- 1 avocado mashed
Instructions

Preheat oven to 350 F.

Layer tortillas with refried beans, chicken and cheese. Bake for 8 minutes.

Remove from oven and top with lettuce, tomatoes, and mashed avocado.

I bet it would work just fine. May not hold up quite as well as a corn tortilla, but you can just grab a fork and dive right in :) Enjoy!

Were you reading my mind? I just bought black beans today (for the first time) because I read how packed with nutrients they are. So, off to the store tomorrow for corn tortillas. I have everything else. I LOVE how you keep things so simple and easy to prepare….but healthy and good tasting. You rock!

I have shredded chicken in the freezer just waiting for this! I am going to look for your Ezekial brand tortillas. Where to you find it? Costco, Harmon’s, Good Earth? I’ll have to look back at your post and see if you mention it.

We buy them from Good Earth. I bet you can find them at most health food stores like Whole Foods too. Not sure if Trader Joe’s would carry them.
