Sometimes it’s nice to switch things up from just a regular chocolate chip cookie. These Oatmeal Chocolate Chip Cookies were the perfect change up. I was a little weary about the oil in this recipe, I have never used so much vegetable oil in a cookie recipe. To my surprise – they turned out wonderfully! Crispy, crunchy, and delicious!

A crispy, crunchy perfect oatmeal chocolate chip cookie.
Mix together sugars in large bowl. Add oil, eggs, vanilla and water. Mix until well combined.
In a separate bowl mix together flour, baking soda, and salt. Slowly add dry ingredients to wet ingredients; mix well. Bake 10-12 minutes, or until light brown.

If I cannot have a peanut butter cookie the next best is an oatmeal cookie- and these were fabulous. Moist, yummy and they make you feel like you are eating something healthy.
