It amazes me when I find the most delicious meals that I’ve never known about, yet have been around for years. Last month the hubs and I went to a birthday celebration in honor of one of my very best friends and I was introduced to the most delicious simple side dish. How have I never had this before? It was so good I scrounged up a note pad and hurriedly scratched down the recipe… knowing that I would be making it again very soon. Voila! Here you have it. The thing I find hilarious, is now that I know about this treasure, I’ve been seeing a similar recipe floating around Pinterest (it has cheese, which I normally love.. but doesn’t sound right to me in this recipe – maybe I need to try it). It was so quick to whip up and so yummy. Try it!

Corn Casserole is a comforting side dish and is great for the holidays.
Preheat oven to 350 F. Combine ingredients mixing well. Pour into greased baking dish and bake for 45-60 minutes, until golden brown and set. Let stand 5 minutes. Enjoy!

How big of a baking dish do I use? 8×8 or 13×9? I’m making this tonight to go along side grilled steak. Thank you!
My version adds two eggs and minced onion. I have tried the one with cheese and couldn’t tell the difference but it added a ton of fat and calories so it is SO not worth it!

Do i have to make the corn bread batter or just mix in the dry corn bread mix? I know its a dumb question but i have to ask lol

Interesting additions! Cheese?? I don’t think I’d like cheese in this particular dish. No thanks on the extra calories :)
