Summertime… and the livin’ is easy. Anyone else love that Ella Fitzgerald song as much as I do? We’ve already started firing up the grill which means that BBQ season is in full force! My favorite time of year. With the grill fired up, I’m always on the hunt for tasty sides to pair with my burgers and dogs. Since I like to keep things simple I’m all about the ‘five-ingredient’ recipes. This Coleslaw with Shaved Brussels Sprouts and Almonds made with Litehouse Coleslaw dressing will be an absolute hit at your next gathering. I know you can make your own coleslaw dressing, but why do that when you can grab a bottle of the Litehouse Coleslaw dressing while you’re picking everything else up at the store? Saves you time and it’s delicious. Win/Win! What I love about it is that it’s made extra thick and creamy AND made with freshly-made mayonnaise. So it’s perfectly sweet, perfectly tangy and since it’s so thick the bonus is that it won’t ‘water out’ your cabbage – that’s HUGE. You know what I’m talking about if you’ve ever made your own dressing.
I’m a fan of Brussels sprouts and I am well aware that you ether like them or you don’t. I would just about dare someone that doesn’t like them to try this delicious side dish and tell me you didn’t like it. I was inspired by my Chopped Brussels Sprouts Salad (which you have to try!) and later turned into my Cheesy Brussels Sprouts and Avocado Toast (life.changing.) to put a new twist on traditional coleslaw. The other great thing about the Litehouse Coleslaw dressing is that since it’s sold cold, all you have to do is mix it together with the rest of the recipe ingredients and you can serve it right away. None of that waiting for it to chill business. Don’t be surprised if you find your friends/family/guests not only enjoying their slaw as a side, I bet you’ll see some slathering it on top of their grilled burger or dog (YUM!!!) too.

Coleslaw with Shaved Brussels Sprouts and Almonds
Ingredients
- 1 10 oz. bag angel hair coleslaw
- 1 carrot julienne sliced
- 2 c. Brussels sprouts shredded
- 1 c. sliced almonds
- 1 13 oz. bottle Litehouse Coleslaw Dressing
Instructions

In a mixing bowl, combine all ingredients. Mix well until slaw is evenly coated with dressing. Serve immediately.
